Dragon Fruit Overnight Oats with Chia Seeds- delicious, easy and packed with nutrients and antioxidants!
When the morning comes the last thing I want to do is cook an elaborate breakfast! My go-to morning meals are either avocado toast or overnight oats. I recently bought these Dragon Fruit Cubes from Target and I've been adding them to everything! When combined with chia seeds, they make a filling and healthy addition to overnight oats.
Benefits of Dragon Fruit
High in Nutrients: Dragon fruit is low in calories but packed with essential vitamins and minerals. It also contains a substantial amount of dietary fiber.
High in Anti-Oxidants: Antioxidants work by neutralizing free radicals, thus preventing cell damage and inflammation. Studies suggest that diets high in antioxidants may help prevent chronic diseases such as heart disease, cancer, diabetes, and arthritis.
High in Fiber: With 7 grams per one-cup serving, dragon fruit is an excellent whole-food source.
These Dragon Fruit Overnight Oats with Chia Seeds take minutes to prepare. When you wake up in the morning all you have to do is layer them in a jar and go! They taste even better when they've been sitting combined in the jar for a few hours, which make them perfect for a work lunch!
The overnight oats are prepared separately. For the liquid, I like to use a 50/50 ratio of almond milk and coconut milk.
Then I mix the dragon fruit cubes in a food processor along with a few tablespoons of coconut milk. I add them to a bowl and scoop in 2-3 tablespoons of chia seeds.

- 1 Cup Rolled oats
- 1 Cup Almond milk
- 1 Cup Coconut milk
- 1 Cup Dragon fruit cubes
- 2-3 Tablespoons Coconut milk
- 2-3 Tablespoons Chia seeds
- Maple syrup or honey optional sweetner

- Combine the rolled oats and milks in a jar. Stir and leave in the refrigerator overnight.
- Mix the dragon fruit cubes and coconut milk in a food processor or high-speed blender. Pour into a bowl and stir in chia seeds. Leave in refrigerator overnight.
- In the morning, scoop alternating layers of oatmeal and dragon fruit into a clean jar and enjoy!
