Easy Vegan Blueberry Loaf

Easy Vegan Blueberry Loaf

Ingredients:
2 1/4 cups all-purpose flour
1 cup granulated sugar
2 tsp lemon zest
1 tbsp baking powder
1/4 tsp salt
3/4 cup almond milk
1/2 cup vegetable oil
1 1/4 cups frozen blueberries (plus more for decorating the top of the bread)

For the glaze:
1 cup powdered sugar
2 tbsp almond milk

Directions:

Preheat the oven to 350 degrees and line a loaf pan with parchment paper.

In a mixing bowl, whisk together the all-purpose flour, granulated sugar, lemon zest, baking powder and salt.

Add the almond milk and vegetable oil and stir until combined. Be careful not to over mix.

Fold in the frozen blueberries.

Add the batter to the lined pan. Smooth the top with a small spatula. Add some more frozen blueberries to the top.

Bake for 65-70 minutes or until a toothpick inserted into the middle comes out clean (a few crumbs are ok). Remove from heat and let cool throughly before removing the loaf from the pan.

For the glaze:

In a small bowl, whisk together the powdered sugar and almond milk. Pour on the loaf and add blueberries and lemon slices.
