I went overboard with the strawberries this season and I ended up with too many to eat. I decided to make them into a jam but I wanted something with less sugar. Traditional homemade jams contain a lot of sugar. The sugar, not only sweetens the fruit, it combines with the pectin and fruit acids to form the gel texture that makes jam. In this recipe, chia seeds take the place of sugar to form the perfect jam consistency.

This Chia Jam takes only 5 minutes to make and it contains only 4 ingredients. It’s the perfect pairing for toast or overnight oats.

  1. Cook berries over medium heat, stirring occasionally. Once they break down and bubble, mash them.
  2. Add the chia seeds, lemon and maple syrup and stir. Remove from heat.
