Easy Vegan Broccoli Cheddar Soup

Ingredients:
2-3 tbsp olive oil
1 shallot, chopped
2 gloves garlic, minced
1 russet potato, peeled and chopped
3 carrots, chopped
1/2 cup raw cashews
3 1/2 cups vegetable broth
1/2 cup nutritional yeast
1 tsp smoked paprika
1 cup water
4 cups broccoli, finely chopped
2 cups shredded vegan cheddar cheese
Directions:
Sauté the veggies – In a large pot, heat olive oil and sauté shallots, garlic, and carrots until soft.
Add the carrots, potato, cashews, vegetable broth, nutritional yeast and smoked paprika. Bring to a boil and then reduce the heat and let simmer for 15 minutes.
Blend for creaminess – Use an immersion blender or carefully transfer to a blender. Blend until smooth and creamy.
If the soup is too thick, add 1 cup of water. Stir the vegan cheese and broccoli. Bring the soup to a boil and then let simmer for 10 minutes.
