Ingredients
  

  • 2-3 tbsp olive oil
  • 1 shallot, chopped
  • 2 gloves garlic, minced
  • 1 russet potato, peeled and chopped
  • 3 carrots, chopped
  • 1/2 cup raw cashews
  • 3 1/2 cups vegetable broth
  • 1/2 cup nutritional yeast
  • 1 tsp smoked paprika
  • 1 cup water
  • 4 cups broccoli, finely chopped
  • 2 cups shredded vegan cheddar cheese

Instructions
 

  • Sauté the veggies – In a large pot, heat olive oil and sauté shallots, garlic, and carrots until soft.
  • Add the carrots, potato, cashews, vegetable broth, nutritional yeast and smoked paprika. Bring to a boil and then reduce the heat and let simmer for 15 minutes.
  • Blend for creaminess – Use an immersion blender or carefully transfer to a blender. Blend until smooth and creamy.
  • If the soup is too thick, add 1 cup of water. Stir the vegan cheese and broccoli. Bring the soup to a boil and then let simmer for 10 minutes.
