Slow Cooker Vegan Carrot Ginger Soup- hearty, delicious and so easy to make!
The weather is cooling off which means it’s the start of soup season! Is that a thing? It is at my house! I was hesitant about buying a slow cooker because I didn’t know how much I’d use it, but it turned out to be a great purchase. I use it for soups and oatmeal on a regular basis. I love that I can add the ingredients, turn it on and that’s it. No standing over a stove or setting timers so meals don’t burn.
Carrot, ginger, and apple is one of my favorite juices so I knew it would be great as a soup. I like a strong ginger taste, so I added 4 tablespoons to this recipe. If you want a mild ginger taste, add 2 tablespoons.
Ginger is an amazing spice! It’s high in gingerol, a substance with powerful anti-inflammatory and antioxidant properties. Ginger is also highly effective against nausea and it has been shown to be effective against exercise-induced muscle pain.
Carrots are a particularly good source of beta carotene. They also contain fiber, vitamin K1, potassium, and antioxidants.
This soup packs a powerhouse of nutrients! I serve it with a side of brown rice to make it heartier.
Slow Cooker Vegan Carrot Ginger Soup
After the soup is finished cooking, blend it in a Vitamix (or other high-powered blender) for a few minutes to make it creamy.
