This recipe takes only 10 minutes to prep and it can be made with different kinds of berries as well.

Vegan Strawberry Breakfast Bars
Ingredients needed:
3/4 cup all-purpose flour
1 cup rolled oats
1/3 cup brown sugar
1 tbsp sugar
3 tbsp melted coconut oil
3 tbsp vegan butter
2 cups fresh strawberries, diced
1/2 teaspoon salt
1 tablespoon cornstarch
1 tbsp freshly squeezed lemon juice
Instructions:
Preheat the oven to 375 degrees. Line an 8 inch baking tray with parchment paper.
To make the crumble topping: add the oats, flour, brown sugar, and salt to a mixing bowl. Pour in the melted butter and melted coconut oil and stir until it is crumbly. Take half of the mixture and press it down into the bottom of the greased pan using a spatula. Set the other half of the mixture aside.
In a small bowl, toss the strawberries with the lemon juice, the cornstarch, and 1 tablespoon of sugar.
Sprinkle the strawberry filling over the crust and top with the remaining oat mixture.
Bake the bars for 35 minutes or until the fruit is bubbling and the oat mixture is lightly browned. Let the bars cool completely before slicing.
