Preheat the oven to 375 degrees. Line an 8 inch baking tray with parchment paper.
Add the oats, flour, brown sugar, and salt to a mixing bowl. Pour in the melted butter and melted coconut oil and stir until it is crumbly. Take half of the mixture and press it down into the bottom of the greased tray. Set the other half of the mixture aside.
In a small bowl, toss the strawberries with the lemon juice, the cornstarch, and 1 tablespoon of sugar. Sprinkle the strawberries over the crust and top with the remaining half of the oat mixture.
Bake the bars for 35 minutes or until the fruit is bubbling and the oat mixture is lightly browned. Let the bars cool completely before slicing.
