Easy Vegan Protein Waffles

These high-protein waffles require a few basic ingredients and they’re a great way to start the morning! They can be made in 15 minutes (start to finish) and leftover batter keeps well in the fridge for a few days. I love to top them with melted peanut butter for an extra boost of protein and a heaping of fresh berries for sweetness. This recipe can also be used to make pancakes. I like to make a double batch of this recipe so I can quickly make these waffles during the week.

Easy Vegan Protein Waffles

Ingredients:

2 teaspoons apple cider vinegar

1 cup vanilla almond milk (or your favorite plant milk)

1 cup all-purpose flour (you can also substitute whole wheat flour or oat flour)

1/3 cup vegan protein powder (Orgain Protein Powder in Peanut Butter is my favorite- great flavor, but their vanilla protein powder is also great)

1 tablespoon sugar or substitute agave

1 tablespoon baking powder

1/2 teaspoon salt

In a small bowl, combine the almond milk and apple cider vinegar. Set aside for a few minutes.

Add the dry ingredients (all-purpose flour, protein powder, baking soda, sugar and salt) to a medium bowl. Whisk together and pour in the wet ingredients (the almond milk/apple cider vinegar mixture). Stir until combined.

Scoop mixture into greased (use cooking spray) waffle iron and cook until slightly browned. Top with fresh fruit (strawberries, blueberries, etc) and instead of maple syrup try melted peanut butter (or your favorite nut butter).

Refrigerate any leftover batter. It will keep for 2-3 days.
