This recipe is simple enough for a quick breakfast yet special enough for weekend brunch.
Are rolled oats gluten-free?
Rolled oats are naturally gluten-free however, it is in the harvesting and manufacturing process that oats can become contaminated with gluten from other products made in the facility. If you’re avoiding gluten, it’s best to choose a brand that is labeled “gluten-free oats”.

Easy Gluten Free Vegan Oatmeal Waffles
Ingredients needed:

1 cup almond milk
1 teaspoon apple cider vinegar
2 cups rolled oats
1/2 cup applesauce
1 very ripe banana
1 tbsp baking powder
1/2 tsp salt
Optional- strawberries, blueberries and/or raspberries for topping
Instructions for these Vegan Gluten-Free Waffles:
In a small bowl, whisk the almond milk and apple cider vinegar together to create vegan buttermilk. Set aside.
In a high-powered blender or food processor, add the rolled oats, applesauce, banana, almond milk/apple cider vinegar mixture, cinnamon, baking powder, and salt. Blend until combined. Let it sit for a few minutes to thicken.
Spray the waffle iron with cooking spray and pour in the mixture. (I used 1/3 cup for the mini waffle maker). Cook until browned.
Instead of maple syrup I like to top these waffles with melted peanut butter (or any other kind of nut butter) and fresh berries.
Store any leftover batter in an airtight container in the refrigerator for 3 days, or longer if you freeze.
