Easy Vegan Brown Rice Pudding- delicious, creamy and perfect for breakfast!
Rice pudding is traditionally thought of as a dessert, but this Vegan version is healthy enough to eat for breakfast! It’s a great alternative for anyone who’s tired of oatmeal. The flavor is slightly sweet while still being neutral, so it’s the perfect base for adding fresh fruit, nuts, granola or any of your other favorites.
Rice pudding contains milk and eggs, but this Vegan take uses coconut milk to achieve the creamy texture. To make, add the ingredients to a pot and cook and cook for 15-20 minutes.
It refrigerates well so it’s suited for leftovers and meal prep.
