Vegan Pumpkin Chickpea Pizza
Vegan Pumpkin Chickpea Pizza- who says pumpkin is just for desserts? Substitute pumpkin and chickpeas for mozzarella and sauce for a fresh take on pizza.
I love branching out from traditional pizza and trying new flavors and combinations. Pumpkin is used in many sweet recipes, but it tastes just as good in savory dishes. This Pumpkin Chickpea Pizza features seasoned, smokey chickpeas, thinly sliced tomatoes, and red onion. A liberal amount of vegan Parmesan cheese is the perfect finishing touch.
I’ve found that vegan cheese is usually hit or miss, so I was pleasantly surprised with this Go Veggie Vegan Parmesan cheese. Once added to a dish, it tastes nearly identical to regular Parmesan.
Vegan Pumpkin Chickpea Pizza
Ingredients needed:
Pumpkin purée (not pumpkin pie filling- pure pumpkin purée)
Cooked chickpeas
Pizza dough (this is my go-to recipe for easy vegan dough)
Italian herb seasoning
Lemon juice
Onion powder
Garlic powder
Smoked paprika
Olive oil
Tomatoes
Red onion
Vegan Parmesan cheese
Make the dough and roll it out on a piece of lightly floured parchment paper.
In a small bowl, add the pumpkin purée, Italian seasoning, lemon juice, onion, and garlic powder. Stir together until all the ingredients are combined.
In a second small bowl, add the drained and rinsed chickpeas, olive oil, and smoked paprika. Mix together until all the chickpeas are seasoned.
Spread the pumpkin mixture onto the dough using the back of a wooden spoon.
Arrange the sliced tomatoes on the pizza.
Add the seasoned chickpeas, sliced red onion, and sprinkle with vegan Parmesan cheese.
Cook the pizza on a stone or a lined baking sheet at 400 degrees Fahrenheit for 16-18 minutes or until the crust edges are slightly browned. Sprinkle with chopped fresh basil and serve.

For the pumpkin sauce
- 3/4 cup Pumpkin puree
- 1 tsp Italian seasoning
- 1/2 tsp Garlic powder
- 1/2 tsp Onion powder
- 1/2 tsp Fresh squeezed lemon juice
For the seasoned chickpeas
- 1 cup cooked chickpeas, drained and rinsed
- 1 tsp olive oil
- 1/2 tsp smoked paprika
Pizza toppings
- 1/2 Small red onion, sliced
- 2 Tbsp Vegan Parmesan
- Black pepper (to taste)
- Fresh basil to garnish
Instructions
- In a small bowl, add the pumpkin purée, Italian seasoning, lemon juice, onion, and garlic powder. Stir together until all the ingredients are combined.
- In a second small bowl, add the drained and rinsed chickpeas, olive oil, and smoked paprika. Mix together until all the chickpeas are seasoned.
- Roll out the prepared pizza dough and spread the pumpkin puree on top. Arrange the sliced tomatoes on the pizza.
- Add the seasoned chickpeas, sliced red onion, and sprinkle with vegan Parmesan cheese.
- Cook the pizza on a stone or a lined baking sheet at 400 degrees Fahrenheit for 16-18 minutes or until the crust edges are slightly browned. Sprinkle with chopped fresh basil and serve.
