Vegan Pumpkin Chickpea Pizza

Who says pumpkin is just for desserts? Substitute pumpkin and chickpeas for mozzarella and sauce for a fresh take on pizza.

Ingredients
  

  • Easy Vegan Pizza Dough (see post for link)

For the pumpkin sauce

  • 3/4 cup Pumpkin puree
  • 1 tsp Italian seasoning
  • 1/2 tsp Garlic powder
  • 1/2 tsp Onion powder
  • 1/2 tsp Fresh squeezed lemon juice

For the seasoned chickpeas

  • 1 cup cooked chickpeas, drained and rinsed
  • 1 tsp olive oil
  • 1/2 tsp smoked paprika

Pizza toppings

  • 1/2 Small red onion, sliced
  • 2 Tbsp Vegan Parmesan
  • Black pepper (to taste)
  • Fresh basil to garnish

Instructions
 

  • In a small bowl, add the pumpkin purée, Italian seasoning, lemon juice, onion, and garlic powder. Stir together until all the ingredients are combined.
  • In a second small bowl, add the drained and rinsed chickpeas, olive oil, and smoked paprika. Mix together until all the chickpeas are seasoned.
  • Roll out the prepared pizza dough and spread the pumpkin puree on top. Arrange the sliced tomatoes on the pizza.
  • Add the seasoned chickpeas, sliced red onion, and sprinkle with vegan Parmesan cheese.
  • Cook the pizza on a stone or a lined baking sheet at 400 degrees Fahrenheit for 16-18 minutes or until the crust edges are slightly browned. Sprinkle with chopped fresh basil and serve.
