Bomb Pops are a summer ice cream truck staple. They’re also the quintessential Fourth of July dessert given their coloring. For this holiday weekend, I thought it would be fun to try a healthy take on Bomb Pops. Traditional Bomb Pops are basically a mixture of sugar and water. I gave them a healthy upgrade by using fresh fruit and non-dairy yogurt. There’s no added sugar and no food coloring.
The blue color is achieved by using Blue Pea Powder. Blue pea powder is derived from the butterfly pea plant, a vining flower. It is created by grinding up the petals of the plant. Butterfly pea plants have long been used to create a natural dye for edible dishes. Blue pea powder is full of antioxidants, and supports heart health. The taste is very mild and the plant is used for color rather than to enhance the taste.
Homemade Healthy Bomb Pops
To achieve the 3 different colors, each section must be frozen before layering a new one. The popsicle containers are narrow, they can be hard to work with, especially after the sticks are in. I used a knife to spread the 2nd and 3rd layers around the popsicle stick. I also wiped down the inside of the popsicle containers before adding a new layer.
I used approximately 1/8 cup of mixture for each layer. You may need more or less depending on the size of your popsicle molds.
