No Bake Vegan Fruit Pizza

Fruit pizza is traditionally made with a sugar cookie crust and a cream cheese frosting. This gluten-free recipe uses an almond and date crust (no flour) and dairy-free yogurt instead. This fruit pizza is wholesome enough for breakfast, but it is also sweet enough to pass as dessert. It’s ready in 10 minutes and no oven is needed!

No Bake Vegan Fruit Pizza

Ingredients needed:

For the crust:

1 cup almonds (roasted or plain are fine)

1 cup pitted Medjool dates

Yogurt topping:

Dairy-free vanilla coconut yogurt

Toppings:

Fresh berries- strawberries, blueberries, blackberries, raspberries, and bananas.

Melted peanut butter

Instructions:

No Bake Vegan Fruit Pizza

Add the almonds and the pitted Medjool dates to a food processor or high-powered blender. Blend until fine. The mixture should stick together when you pinch it. Place the ring from a springform pan on a plate and pour the crust in. Press the crust down using a spatula. It will firm up as it is compacted. Remove the ring.

No Bake Vegan Fruit Pizza

Spread on a layer of dairy-free yogurt.

Add fresh fruit to the top and drizzle with melted peanut butter. I choose strawberries, blueberries, raspberries, blackberries, and bananas. Kiwis, peaches, and mangos are also great choices.

Store leftovers in an airtight container.
