Almond Milk Ice Cream Recipe- guilt free & delicious!
Almond milk ice cream is fun and easy to make at home. Best of all, it can be customized a number of ways! I made chocolate and strawberry flavors, but you can easily substitute another fruit (like blueberries, raspberries or mangos).
This recipe can be made using either an ice cream maker or a high-speed blender like a Vitamix. It's refreshing, delicious and the perfect treat on hot days!
This almond milk ice cream also has significantly fewer calories and fat than full-fat ice cream.
Almond Milk Ice Cream Recipe
This recipe only takes about 10 minutes to prepare. I used cashew butter for both versions, but you could also substitute it with almond butter or peanut butter (to make chocolate peanut butter). I made my own cashew butter by adding 1 cup of raw cashews to a Vitamix. I blended for approximately 5 minutes, occasionally scraping down the sides.

- Ice Creamer Maker Directions: whisk ingredients together and churn according to machine instructions. Vitamix Directions: whisk ingredients together in a bowl. Freeze in ice cube tray. Put ice cubes in Vitamix and blend until smooth.
This ice cream is best enjoyed fresh, but it can also be kept in an insulated container like this.
