These Banana Oatmeal cookies are ridiculously easy to make and they taste amazing! The texture is soft and crumbly with the perfect amount of sweetness. 

This recipe is completely foolproof and it comes together in minutes. Make a batch (better yet 2!) because these won’t last!

These cookies are vegan, gluten-free and they have no flour or added sugar!

Ingredients

  • 2 ripe bananas
  • 1 cup gluten-free rolled oats
  • 1/3 cup Vegan Chocolate chips

Instructions

  1. Preheat oven to 350 degrees. Line a baking sheet with Parchment paper.
  2. Mash bananas in a bowl. Using a food processor, blend the oats for a few seconds. Be careful not to over-mix. You want to chop the oats without turning them into oat flour. Add the chopped oats to the bowl with the banans and pour in the chips.
  3. Scoop a heaping tablespoon of mixture and form it into a cookie. Don't worry if the mixture feels wet. It will solidify after baking.
  4. Bake the cookies for 14-16 minutes or until golden brown. Let cool thoroughly and enjoy!

Preheat the oven to 350 degrees. Line a baking tray with parchment paper. 

Mash the bananas in a bowl using a wood spoon. Then, give the oats a quick spin a food processor for a few seconds. The goal is to roughly chop the oats up, not to turn them into a powder. Transfer the oats to the bowl with the banana and pour in the chips.

Mix the ingredients together. 

Scoop a heaping tablespoon of dough and form it into a cookie shape. Bake the cookies for 14-16 minutes or until golden brown. Let cool and enjoy!
