Just because they’re healthier, doesn’t mean they’re lacking flavor! These blondies are gooey, chewy, and absolutely delicious. Unlike traditional blondies, these are high in protein and in fiber.

These blondies only take 10 minutes to prep and they’re made with basic pantry ingredients.

Healthy Vegan Chickpea Blondies
Ingredients needed:
1 can chickpeas (rinse and drain)
3/4 cup rolled oats
1/4 cup maple syrup
1/4 cup creamy peanut butter (you could also substitute almond butter or cashew butter)
1 tsp pure vanilla extract
2 tbsp melted coconut oil
1 tsp cinnamon
1 tsp baking powder
1/2 tsp salt
1/3 cup mini vegan dark chocolate chips
1/3 cup chopped walnuts (you can substitute pecans)
Instructions:
Preheat the oven to 350 degrees and spray an 8-inch baking tray with cooking oil.
Add the oats to a food processor and mix until they are finely grounded to create oat flour. Add the chickpeas, peanut butter, pure vanilla extract, coconut oil, maple syrup, baking powder cinnamon, and salt and mix until thoroughly combined (smooth). Stir in the chocolate chips and walnuts.
Scoop the batter into the baking dish and use a spatula to smooth it out. Sprinkle another few tablespoons of mini chocolate chips and walnuts on top.
Bake for 16-18 minutes or until a toothpick inserted into the center comes out clean. Let the bars thoroughly cool before removing them from the pan. Slice and enjoy!
