The Best Vegan Chickpea Meatloaf- a healthy take on a classic!
The cold weather has me craving comfort food! I decided to start experimenting with vegan versions of meatloaf. I’m a big fan of chickpeas. Not only do they taste great, but they’re also so versatile! Chickpeas are high in protein and make a great substitute for meat.
This recipe is easy to make, requires little prep time and it’s ideal for leftovers!
The Best Vegan Chickpea Meatloaf
Preheat the oven to 375 degrees. Mix the ingredients (except for the glaze) together in a large bowl.
Using a food processor and working in batches, roughly combine the ingredients. Make sure you don’t over-mix! There should still be whole chickpeas. Over-mixing will cause your loaf to become soggy.
Line a 9 inch loaf pan with parchment paper. Press the mixture into the pan. Bake for 30 minutes.
While the loaf is baking, prepare the glaze. Whisk the glaze ingredients together in a small bowl.
Remove loaf after 30 minutes in the oven and spread the glaze on top.
Bake for an additional 25 minutes. Remove from the oven and let cool for 15 minutes before serving.
