What Is Butterfly Pea Powder?

Butterfly pea powder is a vibrant blue powder made from dried butterfly pea flowers, a plant native to Southeast Asia. It’s commonly used as a natural food coloring in drinks, smoothies, desserts, lattes, and baked goods thanks to its rich indigo-blue color. One of the most fun things about butterfly pea powder is that it changes color when mixed with acidic ingredients like lemon or lime juice, turning from deep blue to purple or pink.

In addition to its beautiful color, butterfly pea powder is often used in herbal teas and wellness drinks because it contains antioxidants and plant compounds called anthocyanins. It has a very mild, earthy flavor, making it easy to add to recipes without overpowering other ingredients.

Butterfly pea powder works especially well in:

Lemonade and iced teas
Smoothies and smoothie bowls
Frosting and baked goods
Homemade popsicles and frozen treats
Lattes and cocktails
Yogurt, oatmeal, and chia pudding

A little goes a long way, and you can adjust the amount depending on how vibrant you want the color to be.

    Ingredients needed:
5 containers of non-dairy coconut yogurt
    1 cup fresh strawberries
    Juice from 1/2 lime
    1/4 cup fresh blueberries
    1/2 teaspoon butterfly pea powder

    Directions:

In a high powdered blender, combine the strawberries with 1 container of yogurt. Spoon approximately 1/8 cup into each popsicle container. Add sticks and freeze until firm.

Mix 2 containers of yogurt together and add the juice from 1/2 lime. Spoon approximately 1/8 cup into each popsicle container. Freeze until firm.

Mix 2 containers of yogurt together with the pea powder. Scoop into the popsicle containers and freeze until firm.

To achieve the 3 different colors, each section must be frozen before layering a new one. The popsicle containers are narrow, they can be hard to work with, especially after the sticks are in. I used a knife to spread the 2nd and 3rd layers around the popsicle stick. I also wiped down the inside of the popsicle containers before adding a new layer.

I used approximately 1/8 cup of mixture for each layer. You may need more or less depending on the size of your popsicle molds.

Tips for the Best Homemade Popsicles

Freeze Layers Before Adding the Next Color

This helps keep the layers distinct and prevents the colors from blending together.

    Use Ripe Fruit

Naturally sweet ripe fruit gives the best flavor without needing extra sugar.

    Blend Thoroughly

Smooth fruit purees create creamier popsicles with a better texture.

    Don’t Overfill the Molds

Leave a little room at the top because popsicles expand slightly when frozen.

    Healthy Popsicle Variations

    Tropical Summer Popsicles

Swap the berries for mango, pineapple, and coconut milk.

    Protein Popsicles

Add extra coconut yogurt or protein powder for a more filling frozen snack.

    Naturally Sweetened Popsicles

Skip added sweeteners entirely if your fruit is naturally sweet enough.

    Why Homemade Popsicles Are Better

Making homemade popsicles allows you to control:
    ingredients
    sugar levels
    artificial colors
    preservatives

Store-bought popsicles often contain high amounts of sugar and artificial dyes, while homemade versions can be made with fresh fruit and simple wholesome ingredients.

Plus, homemade popsicles are fun for kids to help make.

Fun Ways to Serve Homemade Bomb Pops

These patriotic popsicles are perfect for:

    Fourth of July dessert tables
    Backyard cookouts
    Summer birthday parties
    Poolside snacks
    Picnic desserts
    Kids’ summer activities

    Serve them with:

    fresh fruit
    lemonade
    iced tea
    BBQ favorites
    summer charcuterie boards

    Common Mistakes to Avoid

    Not Freezing Layers Long Enough

If the layers aren’t partially frozen before adding the next color, they may blend together.

    Using Too Much Sweetener

Ripe fruit already adds plenty of natural sweetness.

    Overblending the Yogurt Layer

Overblending can make the white layer too thin.

    Removing Popsicles Too Early

Allow the popsicles to freeze completely before trying to remove them from the molds.
