Super Easy Vegan Zoodles with Peanut Lime Sauce- only 15 minutes to make!
I’ve heard zoodles referred to as a sad substitute for pasta, but it doesn’t have to be that way! This blend of zucchini and carrot noodles is lightly coated with an easy and delicious peanut lime sauce. This whole meal comes together in less than 15 minutes which makes it ideal for busy weeknights.
Super Easy Vegan Zoodles with Peanut Lime Sauce
The first step is to spiralize the zucchini and the carrot. Set them aside (along with the cashews) and combine the sauce ingredients in a skillet over medium heat for a few minutes.
Toss in the zucchini and carrot noodles as well as the cashews and cook for an additional 2-3 minutes. The trick is to frequently toss the zoodles so they don’t overcook. Over-cooking the zoodles makes them watery and mushy.
Once the zoodles are cooked, remove from heat and garnish with cilantro.
