5 Ingredient Healthy Zucchini Chocolate Chip Cookies- These healthy little vegan chocolate chip cookies are made with zucchini, rolled oats, peanut butter, and naturally sweetened with ripe bananas. You’ll never know these were actually made with zucchini!

5 Ingredient Healthy Zucchini Chocolate Chip Cookies

These zucchini oatmeal chocolate chip cookies are extra soft with chewy centers and crisp edges. You can’t taste the zucchini inside, which makes these a great choice for kids that will not eat their veggies.

These cookies require only 5 basic ingredients and they take only 10 minutes to prep.  These cookies contain no flour (they’re gluten-free)and no eggs.

5 Ingredient Healthy Vegan Zucchini Chocolate Chip Cookies

Ingredients needed:

1/3 cup shredded zucchini (remove excess moisture)

2 cups rolled oats

1/2 cup peanut butter

2 very ripe mashed bananas (approximately 1 1/4 cups)

1/2 cup dairy-free chocolate chips

Instructions:

Preheat the oven to 350 degrees.

Using the large holes on the box grater, grate the zucchini. You will need 1/3 cup.

The next step is to remove the excess moisture from the zucchini. Layer it in between paper towels and press down several times until the excess water has been removed.

Add the shredded zucchini, rolled oats, peanut butter, and mashed bananas to a medium mixing bowl. Mix until combined. Fold in the chocolate chips.

Scoop approximately 1 1/2 tablespoons of dough (I used a cookie scoop) and place it on a baking sheet lined with parchment paper.

Top with a few extra chocolate chips. Bake the cookies for 13-15 minutes or until the edges are golden. Remove from the heat and let them cool for 15 minutes before transferring them to a wire rack. The cookies will firm up as they cool.
