After over-indulging this holiday season, I’m ready to get back on track. After weeks of carbs and cookies (Vegan, but still…), I’m excited to get back to plant-based goodness. One of my goals for 2020 is meal prep every week. Meal prep makes eating healthy for the week so much easier! Preparing my meals for the week is made much easier with the help on the Instant Pot. It also makes cleanup a breeze since you’re only using one pot!
Quinoa and beans are perfect ingredients for meal prep. Quinoa is loaded with protein and fiber. It’s a more nutritious alternative to white rice and it pairs wonderfully with beans.
Easy Instant Pot Plant Based Quinoa Burrito Bowls
These burrito bowls are fast and easy to make. Simply saute the oil, garlic, onions, and peppers using the “Saute” button for 7 minutes. Then add the cumin and saute for an additional minute. Add the quinoa, salsa, water, and black beans and cook on the “Rice” setting for 12 minutes. Fluff with a fork, add your favorite toppings and serve!
The quinoa and beans can be kept covered in the refrigerator for up to 4 days.
1. Add the oil, garlic, onions and peppers to the Instant Pot. Using the "saute" setting, Saute the onions and peppers until they start to soften, about 7 minutes. Add in cumin and saute another minute. 2. Add in the quinoa, salsa, water, and beans, to the Instant Pot and seal the lid. Make sure the value is closed. Press the "rice" button, and cook for 12 minutes. Release the pressure when finished cooking. 3. Fluff the quinoa with a fork and serve with garnishes.
