Ingredients:
1 1/4 cups mashed bananas (approximately 2 large bananas)
1 cup oat milk
1/3 cup vegetable oil
1 cup granulated sugar
1 tbsp apple cider vinegar
1 tbsp pure vanilla extract
2 1/4 cups all-purpose flour
1 tbsp baking powder
3/4 tsp salt
3/4 cup chopped walnuts
3/4 cup dairy-free chocolate chips
Instructions:
Preheat your oven to 400°F and line a muffin tin with paper liners or spray with cooking oil.
In a large bowl, mash the bananas. Stir in the vegetable oil, oat milk, granulated sugar, apple cider vinegar, and pure vanilla until well combined.
Sprinkle in the baking soda and salt. Stir in the flour until just mixed—don’t overmix!
