Easy Vegan Smores Cookie Bars

Ingredients:
1/2 cup dairy-free butter, melted
3/4 cup brown sugar, packed
1 tsp pure vanilla extract
1/4 cup almond milk
1 3/4 cup all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 1/2 cups vegan chocolate chips
2 cups mini vegan marshmallows
Directions:
Preheat the oven to 350 degrees and line a baking dish with parchment paper.
In a large mixing bowl, add the melted vegan butter, brown sugar, pure vanilla extract and almond milk. Whisk to combine.
Add the all-purpose flour, baking powder and salt to the mixing bowl and stir until throughly combined.
Scoop the batter (minus 1/4 cup) into the lined baking dish and press down using a spatula.
Add a layer of the chocolate chips on top.
Add a layer of vegan marshmallows on top of the chocolate chips. Take the remaining 1/4 cup of cookie dough and break it into small pieces. Add to the top of the marshmallows.
Bake for 20 minutes and for an additional 3-4 minutes of the Broil setting to toast the marshmallows. Note- be sure to check the s’mores frequently when on the boil setting because the marshmallows can burn very fast.
Remove the s’mores from the oven and let cook for 15-20 minutes. Lift them up from the baking dish using the parchment paper. Slice and enjoy!
