Easy Vegan Smores Cookie Bars- Indulge in all the gooey, chocolatey goodness of classic s’mores with these easy vegan cookie bars—no campfire needed!

Ingredients
  

  • 1/2 cup dairy-free butter, melted
  • 3/4 cup brown sugar, packed
  • 1 tsp pure vanilla extract
  • 1/4 cup almond milk
  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups vegan chocolate chips
  • 2 cups mini vegan marshmallows (I like the Dandies ones)

Instructions
 

  • Preheat the oven to 350 degrees and line a baking dish with parchment paper. In a large mixing bowl, add the melted vegan butter, brown sugar, pure vanilla extract and almond milk. Whisk to combine. 
  • Add the all-purpose flour, baking powder and salt to the mixing bowl and stir until throughly combined. 
  • Scoop the batter (minus 1/4 cup) into the lined baking dish and press down using a spatula.
  • Add a layer of chocolate chips on top.Add a layer of vegan marshmallows on top of the chocolate chips.
  • Take the remaining 1/4 cup of cookie dough and real it into small pieces. Add to the top of the marshmallows. 
  • Bake for 20 minutes and for an additional 3-4 minutes of the Broil setting to toast the marshmallows. Note- be sure to check the s'mores frequently when on the boil setting because the marshmallows can burn very fast.
