2cupsmini vegan marshmallows (I like the Dandies ones)
Instructions
Preheat the oven to 350 degrees and line a baking dish with parchment paper. In a large mixing bowl, add the melted vegan butter, brown sugar, pure vanilla extract and almond milk. Whisk to combine.
Add the all-purpose flour, baking powder and salt to the mixing bowl and stir until throughly combined.
Scoop the batter (minus 1/4 cup) into the lined baking dish and press down using a spatula.
Add a layer of chocolate chips on top.Add a layer of vegan marshmallows on top of the chocolate chips.
Take the remaining 1/4 cup of cookie dough and real it into small pieces. Add to the top of the marshmallows.
Bake for 20 minutes and for an additional 3-4 minutes of the Broil setting to toast the marshmallows. Note- be sure to check the s'mores frequently when on the boil setting because the marshmallows can burn very fast.
