Steps:

  1. Wash the Zucchini: Rinse the zucchini under cold water to remove any dirt or debris. Pat it dry with a clean towel.
  2. Trim the Ends: Cut off both ends of the zucchini to create flat surfaces for easier handling.
  3. Grate the Zucchini:
    • Using a Box Grater: Place the box grater on a sturdy surface like a cutting board. Hold the zucchini firmly and grate it using the side with the medium or large holes, depending on your recipe’s preference.
    • Using a Food Processor: If you have a food processor, use the grating attachment. Cut the zucchini into chunks that fit the feed tube, then feed them through the processor to grate.
  4. Drain the Excess Moisture: Zucchini has a high water content, which can affect the texture of your baked goods if not properly drained.
    • Place the grated zucchini in a clean kitchen towel or a few layers of paper towels.
    • Gather the edges of the towel and twist it to wring out as much moisture as possible. You may need to repeat this step with fresh towels to ensure the zucchini is well-drained.

Ingredients:
1/4 cup vegetable oil
1/3 cup oat milk
1 1/2 tbsp ground flaxseeds
1 cup brown sugar
1 tsp pure vanilla extract
1 cup grated zucchini
1 1/2 cups all-purpose flour
1 tsp cinnamon
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 cup chopped walnuts
3/4 cup dairy-free chocolate chips

Directions:

Preheat the oven to 350 degrees Fahrenheit. Grease a loaf pan or line it with parchment paper.
Grate the zucchini and remove as much moisture as you can using paper towels. (Detailed instructions are at the beginning of this post)

In a medium sized mixing bowl, add the vegetable oil, oat milk, ground flaxseeds, brown sugar and vanilla extract. Whisk until combined.

Add the grated zucchini to the bowl.

Add the all-purpose flour, cinnamon, baking soda, baking powder and salt. Stir until just combined. Be careful not to overmix.

Fold in the chopped walnuts and chocolate chips. Pour the batter into the prepared pan, and bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
