Easy Vegan Chocolate Halloween Cupcakes

These vegan chocolate cupcakes are soft, moist, and delicious! They’re great on their own, but the addition of the vegan buttercream frosting takes them to another level!

To make the cupcakes: Preheat the oven to 350 degrees and add the cupcake liners to the pan. In a small bowl, stir together the almond milk and apple cider vinegar. Let it sit for 10 minutes. In a medium bowl, combine the flour, cocoa powder, sugar, baking soda, baking powder, salt. Whisk together. Combine the melted vegetable oil, almond milk, and vanilla extract in a bowl. Stir together until combined. Then, pour the wet ingredients into the dry and stir to combine. Be careful not to over-mix. Add 3/4 cup of batter to each cupcake. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Let cool thoroughly before decorating.

To make the vegan buttercream frosting: Add the room temperature vegan butter to a large bowl and beat using a hand or standing mixer until creamy. Be careful not to over-mix. Add 1/2 cup of powdered sugar at a time, mixing as you go. Once the sugar is added, add the almond milk and mix another 30 seconds.

Yield: 9 Cupcakes

  • 1 tsp pure vanilla extract
  • For the icing:
  • 1/2 cup vegan butter (room temperature)
  • 1 1/2 cups powdered sugar
  • 1 tbsp almond milk
  • For decorating:
  • Vegan chocolate chips
  • Oreo cookies
  • Candy eyes
  • Chocolate sprinkles

Supplies needed to decorate the ghost, bat and Frankenstein cupcakes:

Vegan chocolate chips

Candy eyes

Chocolate sprinkles

Oreos (Oreos contain no animal-derived ingredients, but they’re not labeled as vegan because they are manufactured on equipment that processes dairy. The cross-processing doesn’t bother me, but if you want a truly vegan cookie, these are would also work).

The cupcakes are easy to decorate even if you don’t have experience using a piping bag.

For the Bat cupcakes: Coat the top of the cupcake with frosting, using either a piping bag or butter knife. It doesn’t have to look neat- the frosting is used as adhesive to hold the Oreos. Using a sharp knife, cut an Oreo in half. Push a whole Oreo on to the top of the cupcake. Push the half Oreos behind the whole. Add a dot of frosting behind the candy eyes and stick them onto the Oreo.

For the Ghost cupcakes: Using a piping bag with a large tip, create a swirl. Take the tip of the chocolate chip and stick them into the frosting for the eyes and mouth.

For the Frankenstein cupcakes: Add green food coloring to the buttercream and mix together. Pipe it onto the top of the cupcakes and use a butter knife to smooth and flatten the top. Add chocolate chips for the bolts, chocolate sprinkles for the hair, and candy eyes.
