Soft & Chewy Vegan Chocolate Chip Peanut Butter Cookies

Ingredients:
1/2 cup vegan butter, softened
3/4 cup creamy peanut butter
1/2 cup granulated sugar
1/2 cup brown sugar
2 tablespoons oat milk
1 teaspoon vanilla
1 1/4 cups all purpose flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
2 tablespoons cornstarch
1/4 teaspoon salt
3/4 cup dairy-free chocolate chips

How to Make Them:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix it up: In the bowl of a stand mixer, or using a large bowl and hand mixer, mix together the peanut butter, vegan butter, sugar, oat milk, and vanilla until smooth.
  3. Add the dry ingredients: Mix in the flour, baking soda, cornstarch and salt until a dough forms. Fold in chocolate chips.
  4. Scoop and shape: Roll dough into balls (about 1 1/2 tablespoons) and flatten slightly on the baking sheet.
  5. Bake for 10–12 minutes, or until the edges are golden.
  6. Cool and enjoy! Let cookies cool on the pan for a few minutes before transferring to a wire rack.
