Ingredients
  

  • 1/2 cup vegan butter, softened
  • 3/4 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 tbsp oat milk
  • 1 tsp pure vanilla extract
  • 1 1/4 cups all purpose flour
  • 3/4 tsp baking soda
  • 1/2 tsp baking powder
  • 2 tbsp cornstarch
  • 1/4 tsp salt
  • 3/4 cup dairy-free chocolate chips

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Mix it up: In the bowl of a stand mixer, or using a large bowl and hand mixer, mix together the peanut butter, vegan butter, sugar, oat milk, and vanilla until smooth.
  • Add the dry ingredients: Mix in the flour, baking soda, cornstarch and salt until a dough forms. Fold in chocolate chips.
  • Scoop and shape: Roll dough into balls (about 1 1/2 tablespoons) and flatten slightly on the baking sheet.
  • Bake for 10–12 minutes, or until the edges are golden.
  • Cool and enjoy! Let cookies cool on the pan for a few minutes before transferring to a wire rack.
