Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Mix it up: In the bowl of a stand mixer, or using a large bowl and hand mixer, mix together the peanut butter, vegan butter, sugar, oat milk, and vanilla until smooth.
Add the dry ingredients: Mix in the flour, baking soda, cornstarch and salt until a dough forms. Fold in chocolate chips.
Scoop and shape: Roll dough into balls (about 1 1/2 tablespoons) and flatten slightly on the baking sheet.
Bake for 10–12 minutes, or until the edges are golden.
