Chewy Vegan Molasses Cookies

Ingredients:
5 tbsp vegan butter, softened
1 cup brown sugar
1/4 Bootstrap molasses
1 tsp pure vanilla extract
2 cups all-purpose flour
1 tsp baking soda
1/4 tsp salt
2 tsp freshly grated ginger
3 tbsp almond milk
1/2 cup white sugar (for rolling)
Directions:
Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
In the bowl of a stand mixer or using a bowl and hand mixer, cream the vegan butter and brown sugar together. Add the molasses, grated ginger and pure vanilla extract and mix until combined.
In a separate mixing bowl, whisk together the all-purpose flour, baking soda, and salt.
Add the vegan butter mixture to the flour and stir until incorporated.
Take 1 tbsp of dough and roll it into a ball. Roll the ball in the white sugar mixture until all the sides are covered. Place the ball on the lined baking sheet and press down slightly with the palm of your hand.
Bake for 10-11 minutes. The cookies will be soft when they come out of the oven, but they will firm up as they cool.
