Chewy Vegan Molasses Cookies

Ingredients
  

  • 5 tbsp vegan butter, softened
  • 1 cup brown sugar
  • 1/4 cup Bootstrap molasses
  • 1 tsp pure vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 salt salt
  • 2 tsp freshly grated ginger
  • 3 tbsp almond milk

For rolling the cookies

  • 1/2 cup white sugar (for rolling)

Instructions
 

  • Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
  •  In the bowl of a stand mixer or using a bowl and hand mixer, cream the vegan butter and brown sugar together.
  • Add the molasses, grated ginger and pure vanilla extract and mix until combined.
  • In a separate mixing bowl, whisk together the all-purpose flour, baking soda, and salt. Add the vegan butter mixture to the flour and stir until incorporated. 
  • Take 1 tbsp of dough and roll it into a ball. Roll the ball in the white sugar mixture until all the sides are covered.
  • Place the ball on the lined baking sheet and press down slightly with the palm of your hand.  Bake for 10-11 minutes. The cookies will be soft when they come out of the oven, but they will firm up as they cool.
