Easy Vegan Pumpkin Scones

Easy Vegan Pumpkin Scones

Ingredients:
2 cups all-purpose flour
1/2 cup brown sugar, lightly packed
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 tbsp pumpkin pie spice
1/2 cup vegan butter, cut into small pieces
2 tsp pure vanilla extract
1/2 cup pumpkin puree
1/4 cup applesauce

For the (optional) glaze:
1 cup powdered sugar
1 1/2 tbsp almond milk

Directions:

Preheat the oven to 400 degrees and line a baking sheet with parchment paper. 

In a large mixing bowl, whisk together the all-purpose flour, brown sugar, baking powder, baking soda, salt and pumpkin pie spice. 

Add the cut-up vegan butter and incorporate using a fork or pastry cutter. Mix until the dough has a crumbly texture.

Add the pure vanilla extract, applesauce and pumpkin puree and stir until combined. 

Transfer the dough to a lightly floured surface knead the dough a few times. With your hands, shape the dough into a circle that measure approximately 1 inch thick. 

Using a knife or pizza cutter, cut the dough into 8 sections (like a pie).

Place the scones on the baking sheet and bake for 14-15 minutes or until lightly golden brown.

Remove the scones from the oven and let cool throughly before glazing.

 To make the white glaze: add the powdered sugar and almond milk to a bowl. Whisk together until combined. Spoon onto the top of the scone.

For the spiced glaze: Add 1/2 cup powdered sugar, 1 tsp pumpkin pie spice and 2 tsp almond milk to a bowl. Whisk to combine. Swirl across the top of the scone using a fork.
