Easy Vegan Pumpkin Scones

Ingredients
  

  • 2 cups all-purpose flour
  • 1/2 cup brown sugar, lightly packed
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp pumpkin pie spice
  • 1/2 cup vegan butter, cut into small pieces
  • 2 tbsp pure vanilla extract
  • 1/2 cup Pumpkin puree
  • 1/4 cup applesauce

For the white glaze

  • 1 cup powdered sugar
  • 1 1/2 tbsp almond milk

For the spiced glaze

  • 1/2 cup powdered sugar
  • 1 tsp pumpkin pie spice
  • 2 tsp 2 tsp almond milk

Instructions
 

  • Preheat the oven to 400 degrees and line a baking sheet with parchment paper. In a large mixing bowl, whisk together the all-purpose flour, brown sugar, baking powder, baking soda, salt and pumpkin pie spice. 
  • Add the cut-up vegan butter and incorporate using a fork or pastry cutter. Mix until the dough has a crumbly texture.
  •  Add the pure vanilla extract, applesauce and pumpkin puree and stir until combined. 
  • Transfer the dough to a lightly floured surface knead the dough a few times. With your hands, shape the dough into a circle that measure approximately 1 inch thick. 
  • Using a knife or pizza cutter, cut the dough into 8 sections (like a pie).Place the scones on the baking sheet and bake for 14-15 minutes or until lightly golden brown. Remove the scones from the oven and let cool throughly before glazing.

For the glaze

  • To make the white glaze: add the powdered sugar and almond milk to a bowl. Whisk together until combined. Spoon onto the top of the scone. 
  • For the spiced glaze: Add 1/2 cup powdered sugar, 1 tsp pumpkin pie spice and 2 tsp almond milk to a bowl. Whisk to combine. Swirl across the top of the scone using a fork.
