Easy Baked Vegan Pumpkin Oatmeal

Easy Baked Vegan Pumpkin Oatmeal

Ingredients:
2 cups old fashioned oatmeal
1 very ripe banana
1/3 cup pumpkin puree
1 cup almond milk
1/4 cup brown sugar (plus more to sprinkle on top)
2 tsp pumpkin pie spice
1 tsp baking powder
1/4 tsp salt
1 tsp pure vanilla extract
1/2 cup pecans, chopped

(optional topping: maple syrup)

Directions:

Preheat the oven to 350 degrees. Grease a loaf pan. You can also make this oatmeal in a 6×6 baking dish. 

Add the banana, rolled oats, almond milk, pumpkin puree, pumpkin pie spice, baking powder, brown sugar, salt and pure vanilla extract to a blender or food processor. Mix until the ingredients are combined. 

Easy Baked Vegan Pumpkin Oatmeal

Pour the mixture into the loaf pan and add the pecans. Sprinkle the top with brown sugar. Add an additional tablespoon of brown sugar if you like your oatmeal on the sweeter side.

Bake for 28 minutes or until the sides are browned.
