Start your fall mornings right with this easy baked vegan pumpkin oatmeal—packed with cozy spices, wholesome oats, and all the pumpkin goodness for a deliciously healthy treat!
Preheat the oven to 350 degrees. Grease a loaf pan. You can also make this oatmeal in a 6×6 baking dish.
Add the banana, rolled oats, almond milk, pumpkin puree, pumpkin pie spice, baking powder, brown sugar, salt and pure vanilla extract to a blender or food processor. Mix until the ingredients are combined.
Pour the mixture into the loaf pan and add the pecans. Sprinkle the top with brown sugar. Add an additional tablespoon of brown sugar if you like your oatmeal on the sweeter side.
Bake for 28 minutes or until the sides are browned. Let cool slightly and enjoy!
