These cookies are guaranteed to bring a smile to everyone’s face this holiday. Best of all, you don’t need expert-level cookie decorating skills to make these look great!
Vegan Melted Snowman Sugar Cookies
These cookies may look complicated, but they’re actually simple to make. I included my favorite recipe for Vegan Sugar Cookies, but you can use any sugar cookie recipe.
Using either a stand or handheld mixer, beat the vegan butter and shortening until it’s until creamy and smooth (around 1 minute). Pour in the sugar and mix on high for 2-3 minutes. Add the cornstarch, almond milk, vanilla extract, almond extract, baking powder, and salt.
Add the flour cup by cup, mixing on low speed. Mix until all the flour is incorporated. Form the dough into a ball and wrap in plastic. Chill for at least an hour.
Remove from the refrigerator and roll out the dough on a lightly floured surface. The key with sugar cookie dough is to make sure it’s thoroughly chilled. Warm dough will not roll out properly.
Cut the dough using either a circular cookie cutter or the top of a drinking glass (which is what I did). Bake at 350 degrees for 9 minutes or until the edges of the cookies are lightly browned. Remove from the oven and let cool thoroughly.
How to Decorate
Supplies needed:
Chocolate gems (they’re the vegan version of M&Ms)
Make the vegan royal icing and pipe it in a circle on the cookie. Cut the marshmallow in half and place on the cookie while the icing is still wet. Add the candy buttons. Let the icing on the cookies dry.
Take a small amount of icing (1/2 cup is plenty) and divide it into two bowls. Color one bowl of icing black and the other one orange. Instead of piping, I found it easier to make the nose, mouth, eyes, and arms using the end of a candy thermometer. I dipped the point in the icing and drew the features on. You could also use a cookie decorating pen.

Ingredients
- For the vegan sugar cookies:
- ¾ cup softened vegan butter
- 2 tablespoons shortening
- ¾ cup sugar
- 2 tablespoons unsweetened almond milk
- 1 tablespoon cornstarch
- ½ tsp pure vanilla extract
- ¼ tsp almond extract
- 2 cup all-purpose flour
- ½ tsp baking powder
- ½ tsp salt
- For the vegan royal icing:
- Optional (for the vegan royal icing)
- 5 tbsp aquafaba (the liquid from a can of chickpeas)
- 3 cups powdered sugar
- For decorations:
- Vegan marshmallows
- Vegan chocolate gems (the vegan version of M&Ms)
- Food coloring

- For the Vegan Royal Icing- Using a stand mixer or hand mixer, beat the aquafaba until it is light and frothy. Add the powdered sugar one cup at a time, mixing as you go. If icing seems too runny, add more powdered sugar. Pipe the icing onto the cookies in a circle.
