Vegan Spiced Apple Bundt Cake

To give this cake a “wow” factor, I used this beautiful bundt pan. This cake would be at home on any holiday dinner table. The design looks especially pretty when dusted with confectioner’s sugar.
Ingredients:
2 1/2 Cups All-purpose flour
1 1/2 Cups Brown sugar
2 Tbsp Applesauce
1/2 Tsp Nutmeg
2 Tsp Cinnamon
1 Cup Vegan Buttermilk (1 tbsp lemon juice mixed with 1 cup almond milk)
1 1/2 Tsp Baking soda
1/2 Tsp Salt
1 Tsp Pure vanilla extract
1 Tbsp Apple cider vinegar
1 1/2 Cups Granny Smith apples- peeled and chopped
1/3 Cup Vegetable oil
Directions:
Preheat the oven to 325 degrees Fahrenheit and coat a bundt pan with cooking oil spray.
Add the flour, brown, cinnamon, nutmeg baking soda, and salt to a mixing bowl or the bowl of a stand mixer. Mix until combined.
In a small bowl make the vegan buttermilk. Add one tablespoon of lemon juice to one cup of almond milk. Let sit for a few minutes to curdle.
Add the vegan buttermilk, vegetable oil, pure vanilla extract, apple cider vinegar, and applesauce to the mixing bowl and mix until combined. Fold in the apple pieces.
Pour the batter into the greased bundt pan and smooth down. Bake for 60 minutes or until a toothpick inserted in the center comes out clean. Let cool for 15-20 minutes and then gently flip the bundt pan over to release the cake. Dust with confectioner’s sugar and enjoy!
