This Vegan Fruit Pizza is sure to be a hit at your next BBQ!
When it comes to summer entertaining, I generally favor anything low maintenance. Low maintenance to me, means minimal effort with maximum results. Take this Vegan Fruit Pizza. It takes minutes to prepare, requires no baking and the end result is delicious and so pretty!
If you're not familiar with Fruit Pizza, it's usually a sugar cookie "crust", topped with a cream cheese icing and garnished with fruit. Sounds pretty tasty, but definitely not healthy or Vegan. This version is every bit as delicious as the original, except it contains no added sugar and it's made from good things like almonds, unsweetened coconut and dates.
The crust is almonds, dates and shredded coconut mixed in a food processor. The icing is shredded coconut, reduced fat coconut milk and a bit of fresh squeezed lemon for tang. You can garnish this Vegan Fruit Pizza with any fruit you'd like, personally I love the way the lemon brings out the flavor in strawberries and blueberries.
This is an easy, fun and delicious dessert that even non-Vegans will love!

- 1 Cup Almonds
- ⅓ Cup Shredded Unsweetened Coconut
- 1 Cup Pitted Medjool Dates
- 1 Teaspoon Vanilla Extract
- 3 Tablespoons Water
- 1 ¼ Cups Shredded Unsweetened Coconut
- 1 Can Reduced fat coconut milk refrigerate for 24 hours only use the cream part
- 2 Tablespoons Maple syrup
- 3 Tablespoons Fresh squeezed lemon juice
- 1 Teaspoon Vanilla Extract

- Combine all the crust ingredients in a food processor and combine until sticky. Press into the bottom of a 9 inch non-stick spring form pan.
- Add all the icing ingredients to the clean food processor and blend thoroughly.
- Pour icing over crust (it will thicken in the refrigerator) and refrigerate for 1-2 hours. Garnish with fruit and enjoy!
