Preheat the oven to 350 degrees Fahrenheit. Line an 8 inch loaf pan with parchment paper.
In a medium mixing bowl, add the all-purpose flour, granulated sugar, baking powder and salt. Whisk to combine.
Add the almond milk, vegetable oil, apple cider vinegar, and pure vanilla extract and stir until combined. Set aside.
For the cinnamon swirl:In a small bowl, whisk together the all-purpose flour, brown sugar and softened vegan butter.
For the Streusel topping:In a small bowl, stir together the all-purpose flour, brown sugar and softened vegan butter.
Pour 1/3 of the batter in the prepared pan. Sprinkle the cinnamon swirl on top. Pour another 1/3 of the batter in the pan, top with cinnamon swirl and add the final 1/3 of the batter. Sprinkle the streusel topping on. Bake for 60 minutes or until a toothpick inserted in the center comes out clean. Let cool and enjoy!
