Ingredients
  

  • 2-3 tbsp olive oil
  • 1  small yellow onion, diced
  • 3 celery ribs, diced
  • 3 carrots, diced
  • 3 garlic cloves, minced
  • 2 tsp smoked paprika
  • 2, 15.5 oz cans black eyed peas, drained and rinsed
  • 14 oz can fire-roasted diced tomatoes
  • 3 cups kale, de-stemmed
  • 4-5 cups vegetable broth
  • salt and pepper to taste

Instructions
 

  • In a large pan or pot, add the olive oil, onions, carrots and celery and sauté over medium heat for 5-7 minutes. 
  • Add the garlic and smoked paprika and cook for an additional 2 minutes. Add the drained and rinsed black eyed peas, fire-roasted diced tomatoes and vegetable broth.
  • Bring to a boil, cover and then reduce to a simmer. Let the soup simmer for 10 minutes. 
  • Remove from the heat and stir in the kale. Season with salt and pepper
