2, 15.5 oz cansblack eyed peas, drained and rinsed
14 ozcanfire-roasted diced tomatoes
3cupskale, de-stemmed
4-5cupsvegetable broth
salt and pepper to taste
Instructions
In a large pan or pot, add the olive oil, onions, carrots and celery and sauté over medium heat for 5-7 minutes.
Add the garlic and smoked paprika and cook for an additional 2 minutes. Add the drained and rinsed black eyed peas, fire-roasted diced tomatoes and vegetable broth.
Bring to a boil, cover and then reduce to a simmer. Let the soup simmer for 10 minutes.
Remove from the heat and stir in the kale. Season with salt and pepper
