Ingredients
  

  • 1/2 cup olive oil
  • 1/4 cup balsamic vinegar
  • 3 tbsp Dijon mustard
  • 3 tbsp honey
  • 1 tbsp fresh thyme
  • 1 tbsp garlic powder
  • salt and pepper to taste

Instructions
 

  • Whisk all ingredients in a bowl until well combined.
  • Toss your favorite veggies—like bell peppers, zucchini, mushrooms, and red onions—in the marinade. Let them soak for 15–30 minutes (the longer, the better!).
  • Grill on medium-high heat until charred and tender, about 4–6 minutes per side depending on the veggie.
