Ingredients
  

  • 1 15.5 oz can black beans (drained and rinsed)
  • 1 cup cucumber (chopped)
  • 1/2 cup red bell pepper (chopped)
  • 3 cups red cabbage
  • 1/2 cup red onion (diced)
  • 1 avocado (diced)
  • 1/4 cup fresh cilantro (chopped)
  • 1 large ripe mango (diced)

For the dressing:

  • 2 tsp agave
  • Juice of 1 lime
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions
 

  • Combine the black beans, mango, red bell pepper, red onion, red cabbage, and cilantro in a large bowl.
  • In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
  • Pour the dressing over the salad and toss gently to combine. Chill in the fridge for at least 30 minutes to let the flavors mingle (if you can wait!).
    Serve and enjoy!
