Vegan Sweet Potato Waffles

Ingredients
  

  • 1/2 cup cooked sweet potato, packed
  • 1 1/4 cups almond milk
  • 1 tsp pure vanilla extract
  • 1 tsp apple cider vinegar
  • 3 tbsp vegan butter, melted
  • 1 1/2 cups all-purpose flour
  • 1 tbsp ground flaxseed
  • 2 tbsp brown sugar
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 1 tsp cinnamon

Instructions
 

  • Add the cooked sweet potato, almond milk, melted vegan butter, pure vanilla extract and apple cider vinegar to a food processor, or blender. Process until smooth.
  • In a large mixing bowl whisk together the all-purpose flour, brown sugar, ground flaxseed, baking powder, salt and cinnamon. 
  • Add the sweet potato mixture and stir until combined.
  • Spoon the batter onto the waffle iron and cook according to the iron's instructions.Serve with vegan butter, maple syrup and a side of fresh fruit.
