Easy Vegan Farro Salad

A flavorful fresh salad that’s packed with chopped vegetables, herbs, vegan feta cheese and tossed in an Italian Vinaigrette dressing.
Prep Time 10 minutes mins
- 1 cup cooked farro
- 2 cups mixed salad greens
- 1 cucumber, diced
- 1 1/2 cups cups cherry tomatoes
- 1 1/2 cups cooked chickpeas
- 1/4 cup finely chopped fresh parsley
- optional- vegan Feta cheese
For the Italian Vinaigrette Dressing:
- 1/4 cup extra virgin olive oil
- 1/4 cup red wine vinegar
- 2 tsp Dijon mustard
- 1 tsp Italian seasoning
- salt and pepper to taste
In a large bowl, combine the mixed salad greens, cooked farro, cooked chickpeas, cucumber, tomatoes, and parsley.
In a small bowl, whisk together the olive oil, red wine vinegar, Dijon, agave, Italian seasoning, salt, and pepper until combined.
