Easy Vegan Farro Salad

A flavorful fresh salad that’s packed with chopped vegetables, herbs, vegan feta cheese and tossed in an Italian Vinaigrette dressing.

Ingredients
  

  • 1 cup cooked farro
  • 2 cups mixed salad greens
  • 1 cucumber, diced
  • 1 1/2 cups cups cherry tomatoes
  • 1 1/2 cups cooked chickpeas
  • 1/4 cup finely chopped fresh parsley
  • optional- vegan Feta cheese

For the Italian Vinaigrette Dressing:

  • 1/4 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 2 tsp Dijon mustard
  • 1 tsp Italian seasoning
  • salt and pepper to taste

Instructions
 

  • In a large bowl, combine the mixed salad greens, cooked farro, cooked chickpeas, cucumber, tomatoes, and parsley.
  • In a small bowl, whisk together the olive oil, red wine vinegar,  Dijon, agave, Italian seasoning, salt, and pepper until combined.
