Ingredients
  

For the Salad

  • 1 large cucumber, chopped
  • 1 pint cherry tomatoes, halved
  • 1 red bell pepper, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted
  • 1 can Chickpeas, drained and rinsed
  • 1 Avocado, diced
  • 1/4 cup Chopped fresh parsley

For the Creamy Tahini Dressing

  • 1/4 cup tahini
  • 2 tbsp lemon juice
  • 1 tbsp red wine vinegar
  • 1 garlic clove, minced
  • 1 tsp dried oregano
  • 1-2 tbsp water (to thin)
  • Salt and pepper to taste

Instructions
 

  • Prep your veggies. Chop everything into bite-sized pieces and toss into a large salad bowl.
  • Whisk the dressing. In a small bowl, mix tahini, lemon juice, red wine vinegar, garlic, oregano, and a splash of water. Keep whisking until smooth and creamy. Add more water to reach your desired consistency.
  • Assemble & serve. Pour the dressing over the salad and toss to coat. Sprinkle with fresh parsley and serve immediately!
