Ingredients

  • 1/3 cup shredded zucchini (excess moisture removed)
  • 2 cups rolled oats
  • 1/2 cup peanut butter
  • 2 very ripe mashed bananas (roughly 1 1/4 cups)
  • 1/2 cup dairy-free chocolate chips

Instructions

  • Preheat the oven to 350 degrees.
Using the large holes on the box grater, grate the zucchini. You will need 1/3 cup. The next step is to remove the excess moisture from the zucchini. Layer it in between paper towels and press down several times until the excess water has been removed.
  • Add the shredded zucchini, rolled oats, peanut butter, and mashed bananas to a large mixing bowl. Mix until combined. Fold in the chocolate chips.
  • Scoop approximately 1 1/2 tablespoons of dough (I used a cookie scooper) and place it on a baking sheet lined with parchment paper.
  • Top with a few extra chocolate chips. Bake the cookies for 13-15 minutes or until the edges are golden. Remove from the heat and let them cool for 15 minutes before transferring them to a wire rack. The cookies will firm up as they cool.
