Easy Vegan Pumpkin Pie with Candied Pecans- a vegan take on a Thanksgiving classic!
Can you believe Thanksgiving is this week? I’m currently planning the menu and of course, pumpkin pie has to be on it! This Vegan Pumpkin Pie with Candied Pecans is so good, even non-vegans will like it! It’s really easy to make thanks to the store-bought crust. When it comes to store-bought crusts, I much prefer Graham cracker crust over the frozen/refrigerator dough ones. The Graham cracker crusts taste similar to homemade, whereas the dough ones never do (in my opinion).
The filling for this vegan pumpkin pie only requires a handful of ingredients and it’s all mixed in one bowl. It’s creamy, sweet and delicious! The finishing touch is a border of candied pecans. Topped with coconut whip cream, this is the perfect Thanksgiving dessert!
