  1. In a large pan, heat olive oil and sauté the onion for 3-5 minutes on medium heat. Add the garlic, carrots and bell pepper and cook for an additional 5 minutes or until the carrots are soft.
  2. Stir in the cooked rice and add soy sauce. Add the pineapple, peas and cashews. Stir until combined.
