- 1 Carrot chopped
- 2 Garlic Gloves
- 2 Cups Basmati rice cooked
- ½ Onion chopped
- ½ Bell pepper chopped
- 1 Cup Frozen peas
- ½ Cup Cashews
- 1 Pineapple hollowed out- save the reserves
- 1 Tablespoon Reduced sodium soy sauce
- Salt & Pepper to taste

Instructions
- In a large pan, heat olive oil and sauté the onion for 3-5 minutes on medium heat. Add the garlic, carrots and bell pepper and cook for an additional 5 minutes or until the carrots are soft.
- Stir in the cooked rice and add soy sauce. Add the pineapple, peas and cashews. Stir until combined.
